Chinese stir fried noodles

Ingredients:

  • 1 package of Chinese egg noodles
  • 12-15 big tiger shrimps (feel free to add more if you are a shrimps lover!)
  • ½ cup of minced pork (or ground pork)
  • 2-3 King trumpet mushroom, cut in long slices
  • 1 handful of spinach
  • 1 handful of bean sprouts
  • 2 green onion
  • 2 shallots

Sauce for noodle:

  • 2 tbsp Light Soy sauce
  • 1 tbsp Dark soy sauce
  • A pinch Sugar
  • little salt (adjust your taste if soy sauce not salty enough)

Sauce for noodle’s toppings:

  • 1 tsp Light Soy sauce
  • ½ tsp oyster sauce
  • ½ corn starch
  • 1 tbsp water

Method:

  1. Wash and cut green onion and shallots, set aside
  2. Clean and peel your shrimp
  3. With medium high heat, pre-cook your shrimp to about 70% cooked and set aside
  4. Sauté the ground pork with nice golden to about 80% cooked, set aside
  5. Put egg noodles in boiling water and cook for about 1-2 min (Tip 1)IMG_0921
  6. Drain all your noodle water and dry your noodle in a colander and set aside
  7. Add 1 tbsp of oil in pan with medium high heat
  8. Add shallots and brown in golden
  9. Add your egg noodle in pan; give a little time for your noodle to form a nice golden brown. It takes about 40-60 second (or time it takes for your pan to do so, flip and check) (Tip 2)
  10. Add dark soy and light soy sauce and stir well to color all your noodles evenly
  11. Flip the other side of the noodles to brown the other side of your noodle if desire
  12. Put your noodle in serving plates, set aside
  13. Put little oil in pan again, and put mushroom inside, sauté about 1 min until mushroom gets tender a bit
  14. Then Add spinach, bean sprouts and cooked shrimp in pan. Stir and cook about 1-2 min until everything gets hot. Add sauce for topping at the very end cook for another 1 min
  15. Put all topping on top on the noodle at the serving plates
  16. If desires, swirl some sesame oil on top of your dish for extra flavor

 

Tips:

  1. This is how I like to prepare my noodles, by cooking the noodle a little first; it takes out the starch and also soften the noodles better. Be very careful not to over cook your noodle. Add your noodle into boiling water, with medium high heat, dont go over 1 to 2 min. if necessary, take one noodle to test out the softness. And it will be important to let the noodle dry out before you pan fried them, it will give you a nice brown crispy!
  2. Tip to make your egg noodle extra crispy if you wish. add oil all around the edge of your pan and let the oil do the magic and it will crust the noodle for you. check the bottom to control and make sure the crispness that you desire.
