Juicy Meatballs


Juicy meat balls are great with pasta, just as a snack or as party food. Kids love them, ball shape and fun to eat! These are not ordinary boring meat balls. They are super moist meat balls and I have added a twist of Asian flavor inside. I have tried lots of meat ball version in my Kitchen lab and here is the best one for me that I am sharing with you.   • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup + 2 tbsp fresh minced onion
  • 2 garlic (minced)
  • 1 cup of ricotta cheese
  • 2 eggs
  • 1 cup + 2tbsp panko
  • 1 tbsp butter
  • 1 tsp chicken powder
  • 1 tbsp soy sauce
  • some black pepper
  • 2 tsp salt


  1. In medium high heat, caramalize onion with 1 tbsp butter until nice golden brown, set aside

IMG_15682. In a large bowl, mix pork, beef, ricotta cheese, caramalized onion, panko, minced garlic, salt and peppers. Mix with hand all ingredients


3. Add eggs, chicken powder and soy sauce, mix well again IMG_1572IMG_1571

4. Start forming a ball shape with the meat paste


5. I weight each of my meat balls to get them nice and even size. About 60g is nice size for party snack and pasta servings, adjust to your likingIMG_1575

6. Place a parchment paper on top of your baking sheet. This will keep meat balls moist while baking. Place all your meat balls on and get ready to bake


7. Bake meat balls for about 20-25 min at 400F, until they are nice golden. Check your meatballs closely the last 5-6 minutes

8. Once they are baked, transfer all meat balls on another clean parchment paper. The meat ball crust will continue to cook if you leave on the baking sheet and it will create a hard crust under the meat ball and you don’t want that

9. I serve this batch as party snack and cook in tomato sauce for another 1 hour, it was moist and pack of flavor.
