Korean style lotus roots

I love this korean side dish, I decided to try it for the very first time and the taste turn out pretty good. Hope you will like it too ! Happy cooking !

Ingredients

  • 1 large lotus roots
  • 6 tbsp soy sauce
  • 1 tbsp apple vinegar
  • 4 tbsp sake or rice wine
  • 2 tbsp sugar
  • 9 tbsp water
  • 2 garlic
  • 1 shallot
  • 2 tbsp corn syrup
  • 1 tsp sesame oil

 

Method:

  1. Clean and peel lotus roots

2. Cut clean lotus roots in thin slices

3. With medium high heat, brown shallot and garlic for about 20-25 seconds. Then add lotus roots, let it cook for a few minute and stir from time to time

4. Add liquid and sugar in lotus (except corn syrup and sesame oil), stir well

 

5. Cook lotus for about 30 minute, low heat. Watch your fire and stir it from time to time making sure nothing sticks. Add corn syrup and sesame oil at the very end, stir well and ready to serve

Tip 1: Slices lotus very thin will make this dish taste better, the sauce could get into every slices of lotus.
